Apple-Kiwi and Quince Jam

Ingredients:
5 lb apples, pitted and halved
3 lb kiwis, peeled and diced
8 cups of quinces, halved
6 cups of sugar
1 tsp. vanilla
How to Prepare:
Process the quinces in a food processor or blender and boil with the apples, kiwis, sugar and a few cups of water over medium heat for around 50 minutes, stirring all the time until gelled. Remove the foam from the surface.
Spoon some jam on a plate and wait until thickened and gelled, if not continue boiling and testing. The jam should be thick enough to spoon it into the jars. 5 minutes before the jam is ready stir in the vanilla.
When the apple jam is ready, remove the saucepan from the heat and ladle the freshly cooked jam into the sterilized jars up to 1/5 inch from the top to seal the jars.
Then process the jars with the apple jam in a water bath. In a large pot, boil the jars for around 10 minutes and then take them out and leave to cool. Check the lids by pressing them with the finger. In case some of the jars with the apple-quince jam are unsealed, place them into the fridge or reprocess the unsealed jars.
